Blueberry Crepes (made with oatmeal)

Ingredients

1 cup oats

1 1/2 cups almond milk

5 eggs

1 Tbsp almond butter

1 Tbsp honey

1 1/2 cups fresh or frozen blueberries

1 cup water

Blend first five ingredients (except blueberries) until smooth. Set aside to make filling.

In a pot, place blueberries and 1 cup water. Cook on medium heat until reduced (consistency will be gelatinous). Add honey and remove from heat.

Heat your griddle or frying pan and spray with olive oil or canola. With a 1/2 measuring cup, pour the batter onto the griddle, allow to slightly brown then flip. Spoon the filling in the center and fold each side over.

Makes 8 blueberry crepes
