Great Cauliflower Taters

 

Ingredients

3 cups cauliflower

1 cup grated Parmesan

1 cup Italian bread crumbs

2 eggs

1/3 cup chopped green peppers

1/3 cup chopped red onions

1 Tbsp fresh basil

1/2 tsp sea salt

Directions

Bring water to a boil in a pan and add the cauliflower for 3 to 5 minutes. Be careful not to overcook it. Strain the cauliflower and allow it to cool. Chop the cauliflower in a food processor or mash by hand.

Add the rest of the ingredients and mix well. Preheat oven to 375 degrees. Place parchment paper on the cookie sheet(s). Form the taters to your liking and bake for 20 minutes then turn them over and bake for an additional 5-7 minutes. Eat them with your favorite sandwich with or without condiments.

Makes up to 48 taters.
