Yummy Zucchini Burger

Ingredients:

Two zucchinis

1/3 cup finely chopped red onions

1/3 cup finely chopped green peppers

1 Tbsp fresh basil finely chopped

1 tsp pepper flakes

1 cup Italian style bread crumbs

2 eggs

1 tsp sea salt (increase to your taste)

Directions

Peel and grate the zucchini or chop in a food processor. Place in cheese cloth and squeeze the excess water out. lightly beat the eggs in a separate bowl. Place the  zucchini in a bowl with all the ingredients . Be sure to mix well by hand tossing and kneading until homogeneous. Take smaller chunks and form patties. Make about 8 patties.

Frying

In a frying pan, on medium heat, add about 1 Tbsp of olive oil and place patties in frying pan. Cover the frying pan for thorough cooking. Flip the burgers when slightly brown. Be careful not to burn them.

 Baking

Preheat oven to 400 degrees. Line a cookie sheet with parchment paper. Place patties on the cookie sheet and bake for 20 minutes. Flip over and bake for an additional 5 minutes.

Garnish the burgers as you desire. They can be eaten on a bun or between lettuce.
